Fix Docker build: compile TS packages for runtime

Fixes ERR_UNKNOWN_FILE_EXTENSION at container startup by compiling @groombook/types and @groombook/db to dist/ before the runtime stage, and copying only compiled JS instead of raw TypeScript source.
