Promotes the artifacthub-pkg.yml v1.0.1 metadata update from uat to main.

This is a metadata-only change — no code changes. Updates the ArtifactHub package metadata to reference v1.0.1 with the correct Gitea archive URL and checksum, fixing the checksum mismatch that prevents Headlamp from installing the polaris plugin.

The ubuntu-latest runner host already has curl, jq, and ca-certificates
pre-installed. The apt-get update call inside the Docker container was
failing due to broken container networking on the runner host (runs 577,
578), blocking PR #182 (dev→uat promotion).
