Chris Farhood dbc30b8463 docs: add UAT_PLAYBOOK.md for GroomBook monorepo
Add comprehensive UAT playbook with 19 test sections covering:
- Authentication (OIDC, sessions, RBAC)
- Setup Wizard / OOBE
- Client & Pet Management
- Appointment Scheduling
- Services, Staff, Invoicing & Payments
- Customer Portal, Waitlist, Search
- Reports, Calendar, Email Reminders
- Grooming Logs, Settings
- Mobile/PWA, Navigation, Error States
